Ingredients

For the Marinade

  • 2 pounds (900g) boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons plain Greek yogurt
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • Salt and pepper, to taste

For the Garlic Sauce

  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon freshly squeezed lemon juice
  • Salt and pepper, to taste

For Serving

  • Pita bread or flatbread
  • Sliced tomatoes
  • Sliced cucumbers
  • Sliced red onions
  • Chopped fresh parsley or cilantro
  • Lemon wedges

Instructions

  1. In a bowl, combine all the marinade ingredients: olive oil, minced garlic, lemon juice, Greek yogurt, ground cumin, ground coriander, ground paprika, ground turmeric, ground cinnamon, cayenne pepper (if using), salt, and pepper. Mix well to form a smooth marinade.
  2. Add the chicken cubes to the marinade and toss until they are well-coated. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.
  3. Preheat your grill to medium-high heat.
  4. Thread the marinated chicken cubes onto metal skewers, leaving a small gap between each piece.
  5. Place the skewers on the preheated grill, positioning them horizontally over direct heat. Close the grill lid.

  9. Heat the pita bread or flatbread on the grill for a minute or until lightly toasted.
