Ingredients

  • 6 large eggs
  • 2 cups mixed fresh herbs (parsley, cilantro, dill, mint), finely chopped
  • 1 small onion, finely chopped
  • 2 green onions (scallions), thinly sliced
  • 1/2 cup spinach, finely chopped
  • 1/4 cup walnuts, chopped
  • 1/4 cup barberries or dried cranberries (optional)
  • 1/4 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste
  • Olive oil, for brushing the grill grates

Instructions

  1. Preheat your grill to medium heat, around 350°F (175°C). Brush the grill grates with olive oil to prevent the frittata from sticking.
  2. In a large mixing bowl, crack the eggs and whisk them until well beaten. Add the chopped herbs, onion, green onions, spinach, walnuts, and barberries (if using). Mix well to combine.
  3. Sprinkle the ground turmeric and cumin over the herb mixture. Season generously with salt and pepper. Stir everything together until the herbs and spices are evenly distributed throughout the mixture.
  4. Carefully pour the herb and egg mixture onto a well-greased grill-safe baking dish or cast-iron skillet.
  5. Place the baking dish or skillet directly on the grill grates. Close the grill lid and let the frittata cook for 25-30 minutes, or until the eggs are set and the edges are golden brown.
  6. Once cooked, remove the frittata from the grill and let it cool slightly. Cut it into wedges or squares for serving.
  7. Serve the Grilled Persian Herb Frittata warm or at room temperature. It can be enjoyed as a light main course or sliced into smaller pieces as an appetizer. It pairs well with a side salad or some crusty bread.

Note: Kuku Sabzi can also be refrigerated and enjoyed later. It makes for a delightful leftover dish.
